High Protein Lunch- Warm cottage cheese wrap
NEW HIGH PROTEIN LUNCH RECIPE 🤩
This is PERFECT for the days when you’ve a bit longer to prepare your lunch & need something to fill you up until teatime.
With 37g of protein, it’s an absolute game changer for me.
I tried it for the first time yesterday as I was getting fed up of bagels, omelettes & scrambled eggs on toast (😂 I know, who thought that would ever happen!). I often find trying a new recipe gets me out of a rut with food!
This will now be on my lunch menu a few times a week & I’ll be experimenting with fillings 😎
It’s veggie too 😍
Here’s what you need:
A tub (250-300g) of Cottage Cheese
2 Eggs.
Yes that’s right! That’s it!
I also added salt and pepper and some oregano to mine. I’d recommend seasoning and you might like to experiment with other herbs. Garlic Salt would be nice I think!
You also need to line a baking tray with greaseproof paper and turn the oven on to 170.
Method:
Combine the eggs and cottage cheese and any seasoning until there’s no lumps.
(I used my Nutri Ninja for around 1 minute .
Pour the mixture onto the baking tray and tip the tray around to make sure it’s evenly covered.
Bake at 170 for around 35-40 minutes (will vary depending on your oven).
Remove and allow to cool, peel off the baking paper.
To serve:
I’ve enjoyed stuffed with rocket, tomatoes, avocado and balsamic. It’s big, but you won’t need anything else and it’ll keep you full for hours. You could in half and share it, but my husband turned his nose up at it when I told him what was in it 😂
